Oh I can't wait for Christmas baking! I have to get through the Thanksgiving pies first.
This recipe is for my favorite fail-proof cookie-cutter sugar cookies. I leave out the coconut b/c I don't like it. My sister and I used this recipe and quintuple it to make several hundred Christmas/holiday cookies to give out to friends and bring to work every year:

It makes so many that if you need to tweak oven times or even if you mess up an entire cookie sheet's worth, there's plenty of dough left over to get a decent sized batch! They're great plain or with royal icing or the glaze in the recipe.
My mom has an old fashioned gingerbread recipe that we have made together every year since I was 3 or 4. Now i make it with my kids. it's a lot of work, but I love every second of it!
I love good old fashion spritz cookies. They are my absolute favorite. I think it's because when you bite into one it tastes like butter and sugar. Oh heaven!!
Mexican wedding cakes
1 c butter
1/2 c sugar
2 tsp vanilla
2 tsp water
2 c flour
1 c chopped pecans
1/2 c powdered sugar
Cream butter and sugar together. Stir in vanilla and water. Add flour and pecans; mix until blended. Cover and chill 3 hrs.
Preheat 325 degrees.
Shape dough into balls. Place on ungreased cookie sheet and bake 15-20 mins. Remove cookies from pan to cool. When cookies are cooled off, roll in powdered sugar. Store at room temperature in an airtight container.
Red Velvet cookies
1 box red velvet cake mix
2 eggs
1/3 c oil
Mix all ingredients together. Roll into balls and place on lightly greased cookie sheet. Flatten the dough slightly. Bake 375 degrees until tops start to crackle (8-10 mins).
Homemade cream cheese icing on top is optional.
1 8oz pkg cream cheese, softened
1 stick butter (don't use margarine)
2 tsp milk
1 tsp vanilla
4 c powdered sugar
Beat cream cheese, butter, milk and vanilla in medium bowl with electric mixer on low speed until smooth. Gradually add in powdered sugar, one cup at a time, until smooth.

Count me in with the spritz crowd. Simple and oh so very tasty! Peppermint sugar cookies are a close second though!
i'm a stickler for sugar cookies with sprinkles but definitely chocolate chip cookies (my faves!!)

I just started getting into baking in the past couple months and I was making a lot of fall treats, like pumpkin rolls. MMMMMMMMMMM. Now its time for christmas cookies!
