I think I've put this on here before, but here is an easy recipe for alfredo sauce (and people love it):
1 block of softened cream cheese
2 cloves of garlic, minced
1/2 cup of butter (NOT MARGARINE)
1 & 1/3 cups of milk
3/4 cup freshly grated parmesan cheese
1/8 tsp of freshly ground black pepper
Optional: parsley
Directions:
Cut the cream cheese into cubes. Melt butter over medium heat and add minced garlic. Continue cooking until garlic is softened (a minute or two). Add cubes of cream cheese. Allow cream cheese to soften further and get mostly melted. Do not be concerned that the butter and cream cheese remain separated, they will come together with milk. Add black pepper. Very slowly whisk in milk (this must be done slowly or the sauce will stay lumpy). Allow mixture to thicken a bit while continuing to whisk over medium heat. Add parmesan cheese (you can add more if you prefer that taste!). Toss with hot pasta and serve immediately. Garnish with parsley for some colour! Makes about 2 cups of sauce (great for company or tons of leftovers).
This is a huge hit and one of my fiance's fave meals.
Edit: make sure to not use the powdered cheese, it will make the sauce grainy and yucky. It needs to be freshly grated! Cream cheese can be light and milk can be skim to reduce fat.
I'm pretty sure I found this one in Men's Health. I've made it a bunch of times, and my fiance loves it enough that he actually *requests* it, which is a big deal for him. It's also super easy - if FBIL can dump stuff into a pot and stir, he can do this. And it makes a bunch of leftovers.
Three Amigos Chili
Ingredients
1 Tbsp olive oil
1 small onion, sliced (I hate onion and don't use it)
1 lb ground turkey breast
1 can diced tomatoes with jalapeno peppers
1 can (10.5 oz) each chickpeas, black beans, and kidney beans, drained
1 can (14 oz) low-sodium chicken broth
1/4 tsp each salt and cumin
1/8 tsp cinnamon
Hot sauce to taste
Instructions
In a large pot, heat the oil on medium-low. Add the onion and saute until soft (about 3-5 minutes). Add the turkey and brown for about 5 minutes. Add all other ingredients (tomatoes with juice, chickpeas, beans, broth, and spices). Stir and bring to a boil, then reduce the heat and simmer for 20 minutes. Makes about 6 servings, or 4 if you're hungry :)
Rachel Ray's cowboy spaghetti. Search it on Food Network.com. Super easy and you can eat it for a week. I just add more tomato sauce than she says to.

Is he moving far? Just a suggestion, but when a college friend & his wife moved into our neighborhood we gave them a book of coupons & menus for delivery places around us. If your BIL's moving far away, you can prob. print some menus off menupages.com and put them in the back of the cookbook.
Here's a recipe I used to make these all the time when I 1st moved out. What's better than choc. chip cookies to cure being homesick? My Aunt emailed it to me (she knows how impatient I am so I love her little notes too - like, don't cheat & nuke the butter - haha)
Super Soft CC Cookies
Pre heat 350
1 cup butter (room temp – NO NOT IN THE MICROWAVE)
1/4 c sugar
3/4 c brown sugar
splash vanilla
2 eggs
1 pk instant vanilla pudding
1 tsp baking power
2.5 c flour
1 bag choc chips
Follow general mixing directions... (ya know, wet stuff goes together & dry stuff goes together 1st then you combine them)
Bake 6-8 minutes, until edges are golden – let them cool for a few minutes on the baking sheet and move to wax or parchment paper to cool (they will fall through a wire cooling rack!) WAIT... for the cookie sheet to cool enough to hold before loading up again... or just alternate 2 sheets.
Makes around 4 dozen...
ALT: white choc w/ mac nuts and cheesecake pudding
ALT: peanut butter chips w/ choc pudding

I have one! My mom always serves this and it's so fast and easy and most people love it.
Red Pepper Jelly; warmed
Brick of cream cheese; warmed
Place the cream cheese on a platter and pour the jelly on top ... serve with crackers like Triscuit thin crisps
Oh, I have another family fave:
Chocolate Fudge
1 bag semi-sweet chocolate chips
1 can of condensed milk
Directions:
Stir together chocolate chips and condensed milk in a microwaveable container until well-mixed. Microwave on high for 2 minutes. Remove and stir until mixture is no longer separate. Spread mixture into 8 or 9 inch pre-buttered pan. Chill in fridge and cut into squares. Easiest and most popular fudge I've ever made! It's also great with mint-chocolate chips.
Here is one my mama makes all the time and I LOVE it! There really isn't a recipe, just dump the ingredients in and bake :)
Homemade mac and cheese:
Elbow macaroni
1 can evaporated milk
1-2 eggs
grated cheddar (or really any) cheese
Boil macaroni. Combine all ingredients in a big bowl and dump into a greased 13x9 pyrex dish. Sprinkle extra cheese on top if desired. Place in a 325-350 degree oven until cheese is bubbly (about 20-25 minutes).
The nice thing about this recipe is you can make it all the night or a couple of days before and then pop it in the oven before you are ready to eat. AND IT MAKES AMAZING LEFTOVERS!! (Coming from the girl who normally can't stand leftovers :p )
Oh and for breakfast recipes, I love doing smoothies with protein. I just dump whatever fruit is around with some unsweetned frozen fruit and a splash of juice and add a little protein powder. Its quick, yummy, and keeps me filled up until I get a break between classes.
And for a more homemade breakfast i make (what I call) Mexican Crepes:
Flour tortillas
Eggs
Milk
Cinnamon
Vanilla
Assorted Fruit
Mix up french toast batter (eggs, milk, vanilla, cinnamon) and coat tortilla in batter. Place on hot, nonstick skillet until tortilla is browned. Take off heat and add whatever fruit (ok I add some chocolate chips sometimes :p ) or filling desired and enjoy!

FI and I are making (Read: I'm making) a scrapbook/cookbook for FBIL for Christmas. He's in his last year of college and is going into a finance internship as part of a 5 year master's program. This will be his first time living on his own and we'd like to put together a bunch of bachelor-type recipes into this cookbook. The categories are:
appetizers, quick dinners, fancy dinners, breakfast, lunches that he can pack the night before, and desserts.
Any recipe ideas from the hive??
