I think any pasta dish would work (add in some chickpeas or great white northern beans to give him some protein). Or any stir fry-- you can add eggs (if he eats eggs) for some protein. Just cook your shrimp separately and combing them in your dish.
Does he eat any type of seafood or is he totally vegan?
Perhaps Cheese? or Lentils? or Beans?
Make some baked stuffed shrimp, but for your guy add the stuffing to a zuchinni to make a zuchinni boat. (use any stuffing recipe that catches your fancy and core out the seeds of the zuchinni to make the boat)
Serve with a garlic oil and angel hair or couscous cooked in chicken broth.
A nice wilted spinach would be good too.
He's not vegan, he just was raised not eating meat/seafood & he tries every now & then, but it usually makes him sick.
substitute the shrimp for chickpeas (aka garbonzo beans) or black beans, or fried potatoes. I had a potato burrito the other day off a food truck and it was divine! The potato was cubed up and cooked with onions and mexican spices and I never missed the meat at all.
@longdistanceco_ca: I've never added beans to pasta. But pasta is a good idea, I could always just make him the tomato sauce & then make my noodles with the... ohh gosh, is it olive oil? I rarely make pasta that way, I usually use vodka sauce.
@Eva Peron: Not vegan, just doesn't eat meat or seafood. He practically lives off of cheese.
@lefeymw: That sounds delicious!! I've never made a zucchini boat so hopefully this isn't too difficult to do!

@SandyThePoet: Hmmm, that's a good idea too :). & that's what a chickpea is! Haha thank you... I know what garbanzo beans are, I love those, but hmm a chickpea? & they're the same thing :).
@serabell: Sorry! I forget that not everyone uses the same terms for chickpeas/garbanzo beans. I add beans to pasta all the time because we eat primarily vegetarian-- you can add them with tomato sauce or just some olive oil, garlic, parsely, and pasta water... butter and/or cheese are always nice additions as well. Or pesto or vodka sauce. Really, whatever sauce you usually use is fine. I don't think I've added black or kidney beans to an italian-type pasta dish, but I think I've used all the rest in combo or on their own. It's only one meal, if it doesn't work, have a bowl of cereal and call it a night-- that's my philosophy! :)
@JoJo Bananas: Its like you combined all my favorite foods & herbs into one thing! Avacado, cilantro, butternut squash, chipotle... I'll add shrimp to mine & yea I'm pretty sure that's dinner! If not, it will be very soon :).
@longdistanceco_ca: Its ok :). I've seen chickpeas in recipes before & never looked it up. & cereal is my fallback when I can't decide on what to make. Thank you, I'm having pesto pasta with shrimp added for me. I forgot about pesto & we have pesto mix & I LOVE pesto!
I'm also craving @JoJo Bananas recipe, but that will have to be another night. I'm too hungry to go to the store right now, I'd probably buy everything! But tomorrow, this is most likely dinner :).
Oh I didn't realize anyone asked about the receipe... I will post it when I get home tonight :).

I made Coca Cola sweet & spicy shrimp tacos with mango salsa the other day & yes it was delicious & yes I cooked with Coca Cola! :). I didn't use as much shrimp as I bought so now I have 3/4 pound of leftover shrimp to use soon!
Dillema: DH is vegetarian & doesn't eat shrimp, so I'm trying to think of ideas where I can just not add shrimp to the meal & still have it be a good meal for DH. The only receipes I've found so far, shrimp is the main ingrediant, so if I left shrimp out for DH, he wouldn't have a complete meal. & he doesn't eat tofu.
