Copper sounds good. Just make sure its what you want. The colors I am using for my spring wedding are not really spring colors, but I like them and I've decided that counts more than what colors I should be using :)
I began with aubergine as well, and ended up with chocolate brown. Ilove the idea of copper though, and pewter gray sounds lovely as well.
In the end, we're going with aubergine, chocolate brown and hints of green (cymbidium orchid style green).
I had Aubergine in my wedding in October and we used a gun metal grey it looked great!!

I think copper would be really beautiful, especially for fall. It brings to mind images of old dutch still life paintings.
If you wanted something different, how about a soft, mossy green and a rich chocolatey brown as accents instead? Something about that strikes m as very autumnal. Like a vineyard on a fall afternoon!
My color pairing dilemma was resolved when the Feb/March issue of Modern Bride arrived in my mailbox! Page 466 is the start of an eight page spread that showcases a gorgeous winery wedding. The colors are plum (close enough to aubergine for me), apricot, and cantelope. I know, it sounds like a fruit salad, but I am absolutely in love with that combination. The cake is one of the most breathtaking ones I've ever seen. I never would have thought to use light shades of orange in my fall wedding, but it works. I guess that's why they get paid to design weddings and I don't!
P.S. I think I may still use a few copper accents sparingly in the mix.
I love the idea of gray and aubergine. I think that would be lovely. I also like the copper, but I think my vote is for gray.
Copper sounds wonderful! Very fall-ish! :) Also, I saw it once in a magazine paired with a turquoise-ish teal color...the jewel tones were quite pretty together.
Metallics go great with aubergine-- our colors are cream, gold, and a sunny peach (I guess cantaloupe would be a good description!) with aubergine accents to make the gold pop more. :-)
I think the grey or silver would be a nice choice. Are you rings gold or silver? That might make a difference in your choice.
For my October 2009 beach wedding I'm leaning towards navy or dark turquois, cymbidium orchid green, gun metal silver and hints of aubergine.
My wedding is October of 2009 as well, and I decided on an aubergine and gold theme with punches of deep fuschia (to avoid the Mardi Gras in New Orleans look). The different shades of orange you mention sound gorgeous and will be very different from the traditional warm fall palette. Make sure to post pics next year!
I like the idea of copper. A cream/ivory and maybe sage green could also look really nice.
We're doing eggplant and green for our May wedding. Except... the main place green was going to play a part was in the guy's tuxedos (because I'm not cruel enough to make the guys wear purple!), so now we're thinking about gray or ivory/cream. Ivory/cream was sort of our background neutral, anyway. The green we were using was sort of a muted grassy green, or something sometimes called cypress or moss (but not a yellowy moss).

I've been thinking about copper to pair with aubergine (eggplant) for our October '09 wedding, but now I'm not sure that I'm in love with that color combo. Originally I wanted silver/grey or pewter to go with aubergine, but I thought copper would have more of a fall feel to it.
We're going for a classy, contemporary, elegant feel. Any color pairing suggestions would be appreciated! :)
