honestly i think the pale blue/grey birdcage veils look amazing but i think if you did a chapel length veil in pale grey it would look kind of dirty or dingy when laying close to a white dress. i'm having a hard time picturing it. check out mrs lightning's veil...but her dress is grey/silver as well.
Have you seen such a veil in ashop where you could try it onwith your dress? This sounds to me like it ma need to be custom. I would suggest buying a yard or 2 of the color tulle you would be interested in and laying it over your dress to see how it looks together. I think it could look really nice, maybe you would even want to trim it with a white ribbon or lace for added contrast? I also think it will look very different than a birdcage so you should try it out and post a photo for us to see too ;)

I'm wearing a plain white chapel length silk faille gown from Amsale with very little embellishment. I have a silver/pale gray theme to my wedding since it'll be in the winter. I love the idea of a chapel length pale silver gray veil and wondering what other people think about pairing a white dress with a veil of a darker color? I've read on a lot of sites that it's most appropriate to wear a veil that's as light or lighter than your dress color. Does it really look strange to do otherwise? I've seen some fantastic examples at the Spring 2010 Oscar de la Renta Show where the models wore white dresses and pale blue/gray birdcage veils.
