The kind of cookies used in the photo are sugar cookies with icing on them.  Another option for you could be shortbread cookies or gingerbread (both are good with icing).  You could even mix them up.  This is a great idea for a wedding, super cute 🙂

 

Here are a few recipes I’ve used that turn out good- I would try them out and do a few mock ups so you know what works for sure, I’ve never made an arrangment from cookies.

I wanted to do the same thing for my reception, but was scared away by the price.  One of my clients at work is a manager at cookies by design and she brought them to us as a gift.  She said to put them on a stick they first bake the cookies then have a tool that pretty much just drills a hole and then they stick the wood stick in.  Hope taht is a little help for you.  Let me know how it goes for you.  I am very interested!  Good Luck!
