Our first choice is to roast a whole hog, but if that doesn't work out, we'll do brisket.
I have heard brisket smokes (cooks), and freezes very well.
We would have a smoker onsite at the reception to heat it with once its thawed, so it would not be oven or microwave reheated.
My grandpa LOVES cooking BBQ and has a beautiful smoker, but I would hate him to have to slave over it all day on my wedding day (in a suit!). I am very close to him and I would not want him to have to worry about this. But I know he would be honored to do it beforehand.
Any thoughts or experience?
