Hmmmm, maybe you can write him a love letter? And make a cute frame for it? My FI had done that before, it was soooo cute. The frame was actually made from little souvenirs/momentos he'd kept throughout the years of fun things we'd done together. So there was like, the scorecard from our first mini golf, the card from our first v-day restaurant, the ticket to the empire state building where he first told me he loved me, ticket to the zoo, plane tickets from trips, etc.

FI and I do homemade valentines. Our first year together, he had someone at work teach him how to cut paper hearts awww. I made a card out of construction paper and colored the whole thing. Last year, I stepped up the tech savviness and made an animated slide show of pictures of us set to Michael Buble's "Everything." It took me like three weeks to make haha. Very cute, though. Anyway, I am not sure what to do this year. A heart made of some sort of food stuffs? Suggestions for any cutesy shmoopy homemade valentine love?
