I’m making my own cupcakes for the wedding reception, but most of the frosting recipes I’ve found really won’t hold up under the summer heat. Our reception is going to be outdoors in July in Texas. I hate fondant, so does anyone have any good suggestions? I’m even okay with using canned frostings, if someone has done that and had their cupcakes outside, please share how they held up.

Maybe a cream cheese based frosting?
6 ounces white chocolate, coarsely chopped
1 package (8 ounces) cream cheese, at room temperature
4 tablespoons (1⁄2 stick) butter, at room temperature
1 teaspoon pure vanilla extract
3 cups confectioners’ sugar, sifted

I wouldnt use a canned frosting, I used those when doing cupcakes in my apartment that wasnt even super hot and they melted all over the place. I used a buttercream thats stiff, the recipe from http://www.wilton.com hasnt melted on me yet. You can just add a bit more shortening or sugar to stiffen it up a bit. If you are super concerned about it melting, I would just put a thin layer of frosting and not a big fluffy design that could melt and go all over the place. Good luck!
