Cupcake Test!!

    So I am planning on baking my own cupcakes for my wedding.  I read on Martha Stewart's website that you can freeze cupcakes for up to a week before frosting them.


    I figured I should do a test to see how they taste after various freezing times.

    I made a batch of Magnolia Cupcakes

    I am going to freeze some and try them after 3 days, after 5 days, and after 7 days.  See how they thaw and taste after that.

    The cupcakes fresh out of the oven taste delicious, hopefully they'll still taste good after a week.  If I can't make them ahead of time, it's not realistic  for me to make them for the wedding.

    I plan on also trying out a batch of chocolate, chocolate mint, chocolate peanut butter, green tea, carrot cake, and strawberry.

    That's awesome! gLuck with that! Please let us know how it taste. That's funny how you mentioned the flavors above. Three of those flavors we actually tried at a cupcakery near by and absolutely loved them. I'm not as talented and I know I'll freak out the week of the wedding so I'm not going to attempt to make my own cupcakes. I don't know how many people are fans of 'green tea' but I loved it. Mind me asking you where you got the recipes from?

    Well, the chocolate recipe is also from Magnolia Bakery.


    I actually plan on doing chocolate cupcakes and making the frostings mint and peanut butter flavored.  Add mint extract instead of vanilla extract, and food network has a peanut butter frosting recipe.

    I'm going to adapt some recipes from www.cupcakeblog.com for the others.  I am going to do test runs of everything to make sure it all tastes good.

    I realized how much confectioners sugar it takes to make the frosting.  I think I'm going to need to buy it in bulk!

    I bake cakes/cupcakes as a hobby.

     Freezing cupcakes for a week should be A-Okay!  Even up to a month if you'd like! 

     Just make sure you time how long it will take for your cupcakes take to thaw.  Most likely (depending on it's size) 2-3 hours.  

     Oh and if you're making buttercream icing (i'm assuming since you'r using confectioners sugar), make sure you have a good mixer (such as a Kitchenaid)!  Highly suggested!!

    Finally, another daring gal! I too am making my own cupcakes. I have a FAVE recipe from "Everyday Italian's" Giada De Laurentiis. I absolutely love them!! Instead of using frosting, there is rasberries and creme in the middle and powdered sugar ontop. http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_29942,00.html I I saw that you are making quite a few different kinds. Are you just trying them out to see how they work making them ahead of time or do you plan on making that many different kinds? I am thinking I should make more than one kind. I love to bake but I don't want to overdo myself. Sorry, another ?, how are you transporting your cupcakes to your wedding? Also, will you be using a cake tier or just putting them on a table?

    You guys are making me soooo HUNGRY, now I have to get up and drive to the bakery to get cupcakes.....  I'm actually making red velvet cupcakes for my reception with the help of my FMIL and Nates Aunt- we're using his aunt's recipe. Why red velvet?  Well, my big strong man is actually a cuddley Valentine's Day baby, and his grandparents were married on Valentine's Day, oh and Nate was baptised by Father Valentine!  He doesn't know about the flavor of the cupcakes, so I think it'll be a cute surprise for him!

    Hello there!  I;m a baking novice! Do you make the cupcake and then frost it once you've defrosted it or can you freeze the frosting too??  Am guessing that it's possible as how will anyone have time to decorate cakes so close to the wedding!!!!
