Im doing a cup cake wedding cake plus 1 tier of cake at the top. that way we still have something for us to cut

I did varies cake stands filled with cupcakes and for the cutting cake we got a 6" cake and bought a huge peony as the topper. We had about 75% of the cutting cake left after the wedding and given its size it was easy for us to freeze. I thought the cupcakes looked great on our dessert buffer and we had cupcake bags for folks so they could take them home.
My FI and I were thinking about doing cupcakes instead of cake for our reception but we decided to do the cake thing because our reception venue was going to cover the cost of the cake. When we were going to do the cupcakes, we were planning on getting a small cake to use for our cake cutting.
I've only been to one cupcake wedding and the bride and groom cut a cupcake and then fed each other - just like cake. It was very cute! I would make sure you have enough cupcakes, though. They had 2 flavors and everyone seemed to take two - and I think they were planning on one per person - because they ran out.
Also - I'm not big on the freezing the top layer of cake tradition - so it would be a non-issue for me. I like my cake fresh :)
We did a tiered cupcake display in lieu of a traditional cake and had a 6 inch cutting cake on the top. Our bakery included an 'anniversary cake' in our order so we didn't have to worry about freezing/keeping the top tier, they're just giving us a fresh one on our one year anniversary. As for the amount, I ordered about 40% more cupcakes than we had guests and we still ended up with a bunch left over at the end of the night.
We used 3 sheet cakes, one was the groom's cake, one the bride's cake and the one in the middle was the couple's cake and that was the one we cut. Naturally that one was chocolate!
We are doing a cupcake tower with several varieties and I'm so excited. We are not going to save/freeze anything. But we are going to have "chinese food" containers (in our colors) so people can take one home if they want to. I am going to order 1.5 for every person who will attend because I do think people may take more than one.
I think we're doing cupcakes instead of cake too. I was thinking about ordering more than guests, but we're also having a chocolate fountain.

Alright, so I am tossing around the idea of tossing out a traditional wedding cake and doing cupcakes instead. My FI loves this and they do look really cute all perched on their cupcake stands...
But what about the cake cutting, and the tradition of freezing that top layer? What do you do? Or are these outdated anyway?
HELP!
