A bird’s beak paring? I LOVE mine, but to be honest, its probably because I started out with one. I use it for peeling apples and for really, really intricate work.

That is a bird’s peak paring knife and they are amazing – great for peeling fruit and vegetables and for intricate slicing (think slicing green onions or celery into really thin strips).  I use mine all the time when prepping stir fry.
