Where are you going the night of the wedding? Are you leaving for your honeymoon right away? You would probably want to designate someone to take your dress for safe keeping (my parents are holding on to mine). Also, most rental tuxes have to be returned the next day so someone else could be delegated to this role.
Are you creating a day-of emergency kit? I highly recommend creating one and asking one of your bridesmaids or possibly another close friend who will be with you all day to stash it in her car. Be sure to stock this full of plenty of extras (hosiery, nail polish, lip balm, comb, hairspray, powder, safety pins, double-stick tape, tissues, cotton balls, needle and threa, and whatever you would choose for stain removal on your gown (contact your bridal shop to find out what they recommend for spot removal). You might also want to stash a pair of comfy slippers in there if you have to stick around afterwards for teardown in care your feet are killing you.
Also, what about logisitical coordination for the day? Someone to pass out programs at the ceremony, distribute bubbles or your chosen farewell sendoff, maybe even a bridesmaid or relative to hold on to your cell phone while you're getting ready just in case you get a last minute call from a vendor, they could handle it right away without adding extra stress to you.

Are you having any decorations doing double duty in the ceremony site and the reception site? If so, someone will need to be assigned to take the decor to the new venue. To go along with what MissEdamame said, not only allow someone to hang onto your cell phone, but provide everyone helping you out (BM's, GM, MOH, etc.) a list of all the vendors with their numbers, just in case they are not in your phone or someone doesn't know how to retrieve the numbers themselves. Also, I had a bride once give the entire wedding party a list of numbers to the rest of the wedding party in case more problems arise and to keep everyone on the same page/timeline the day of.

Hi, I'm trying to make a list of things that needs to be done and who will be responsible...i'm sure i'm missing a ton of things please help me add to my list (i don't have a day of coord)
1. collect top teir of wedding cake- groom
2. collect guest book- bm1
3. collect centerpieces-
4. pay vendors
5. collect gifts and card boxes
