Great list! I have seen through working many weddings that having people help you to carry gifts to your room or car or wherever is important, Maybe you won't need it but it stinks to go to leave and realize- crap, we need to get all this in the car! Maybe just have bridesmaids or parents or someone who wouldn't mind getting them to a safe destination after the wedding be on call if it is needed. Or maybe just put someone in charge of it anyway since if you don’t get gifts you will probably get cards, and you don't want to lose that!
Also, where is your reception? Can you leave the flowers over night or need to take care of them that night? Something else to keep in mind, if you aren't going to be giving them away. They are nice gifts for guests though. I like when they put a sticker under one persons plate, and if they have the sticker they get to take the centerpiece home!
Just an idea, and I'm only suggesting this because I am in a simlar situation, that is keeping things on a budget and doing a lot on our own. Is there anyone who has graciously offered to help with the wedding who you could call upon? I asked a friend/coworker to be the day of coordinator just so the day would run smooth and we'd have a point person for anything that came up. She someday would like to do wedding coordinating/planning as a business so I figure I'd give her an opportunity to learn and practice.
Oh what about people in the wedding party helping you with some of these tasks?

Trying to make a big list of jobs/helpers needed so we can start delegating. We are self-catering for appies and desserts but not buffet. Reception in hall with no coordinator. Low-budget wedding (under 5k) so no DoC or anything.
-Ceremony set up/take down person
-Ushers to help make sure people don't take sides, etc etc.
-Readers -ie/ small speech people
-MC
-"DJ" person to control our ipod lists
-Someone to check on bathrooms, garbages, candles, spills, etc
-Appies putter outter person, lol
-Dessert people
-Flowers...PU day before from place who is growing them (home based flower co) and maybe stick in walk in at the hall??
-Person responsible to take cards and any gifts back to my place afterwards
-Clean up Crew
