Hmm.. I'll just throw out a few ideas. Here are some pictures I came across. I know they all have flowers but they're different than a huge flower arrangement in a vase.

I'm on a bit of a succulent kick right now and think this is a really cute diy idea http://yespleaseblog.blogspot.com/2009/05/our-wedding-diy-succulent-centerpieces.html

Or bud vases with single blooms

The centerpiece debate continues...
My original idea was to have a hurricane vase filled with colored stone, topped with flowers, and containing a beta fish swimming around. The FI, for reasons unexplainable, doesn't like the idea, so now I'm stuck.
I'm staying away from candles, etc, because our wedding is in the middle of the day (3pm) in the middle of summer (June 15) and in a green house, with flowers EVERYWHERE! I'm not nixing the idea of still using flowers, although it seems un-needed since there will be flowers everywhere already. The tables are round...the theme is "wildflower garden" and the atmosphere is "casual family reunion" I want something with some visual interest and color, because the table cloths are all white, and I'm completely open to DIY!
Help! I'm desperate for ideas!
