I’m so confused. Are you depressed because you can’t choose a cake flavor? Sorry, I have no experience with this “wacky cake”, but others might?

I think this style of cake was invented during the Great Depression, when eggs and dairy products were expensive people were broke and homemakers had to improvise with the things they had around. 

OP, you could certainly give it a shot, though I don’t know if the vinegar/baking soda reaction will be enough to leaven a heavier batter with carrots and raisins. If you just want an egg or dairy free carrot cake recipe, I’d look online for one that’s already been tested.

Why not look for a recipe for carrot cake, and see if you have the right ingredients?
