Inseptember82:  We are renting a soft serve machine to make it all easier.  

I would prefer to have it scooped, so maybe scooped in cups but sitting on top shaved ice? Or in a tray with the reusable ice cubes scattered throughout to keep it cold?

The desserts in little cups would be really easy to put together. Pick things, like chocolate mousse, trifle, tiramisu, banoffee pie, etc, that will improve in flavour over time, and dish them all up a day or so in advance. A large piping bag will help you fill shot glasses really quickly with little mess. Just make sure you are picking a nozzle that will fit nicely.

Once assembled, put them on trays and in the fridge until you’re ready to serve with cling film over the top. Have the person assisting add the spoons down the side when they are placed out for serving. Keep the extra ones in the fridge and top up the display as and when required.

I would avoid the one with the little biscuit at the bottom- if you’re pre-assembling these yourself the biscuit will go soggy.

Oops. Forgot to add. The last photo of the ice cream scoops in the martini glasses have been pre-assembled and frozen in the plastic glasses. You could do this a day or so ahead of time, too, provided you have plenty of room in the freezer!
