At my wedding, I am having one passed hor d'oeuvres. This is kinda weird and I don't know how it will work out but I am planning on having a lettuce wrap station. I love my dad's restaurant's lettuce wraps; or any lettuce wraps for that matter. I'll have a chicken wrap, fried rice wrap and maybe a seafood wrap with plum sauce on the side.
what about a "mini food" station? you could have shots of tomato soup with little grilled cheese sandwiches, sliders, little crab cakes, etc
I went to a wedding once with a carving station. So they had a big joint of beef and pork and the station attendant shaved off the meat for each guest at the station. It was VERY good!
We are having a live action paella station. I like Ms. Meowerson's idea too!! :-)
We're doing stations! The coolest idea that our caterer had was a salad martini bar, where they set up the station like a bar, put the salad in a shaker, poured in the dressing (from a shot glass), shook it up and served it in a martini glass. I'd also look into "chef action" stations, where someone is there carving meat or creating pasta dishes.
I love the idea of stations because it makes people get up and mingle instead of going through the line and just sitting back down. Good luck girl!
ORRR you could have a "comfort food" station with things like mac and cheese, etc.
I'm having a bruschetta station with a whole host of different toppings. I'm really excited about that.
We're going to have an "everything wrapped in bacon" section with a grill (bacon wrapped scallops, dates, lamb, etc) as well as a apple & local cheeses station.

Ok...you ladies have me starving! But this is an excellent thread! I've heard of Asian stir fry stations, wonton stations.... maybe instead of taco bar, you could do a burrito bar (very slightly different). I love the idea of a comfort food station.... or a Southern comfort food station! Also, there's always room for a bread type station. I saw someone do an olive oil and vinegar tasting station with all of their bread! That looked AMAZING! Don't forget a dessert station too!

@stephinPA: I wasnt sure how I felt about having a carving station, but you just made it sound awesome! I think the mashed potato bar really sells it.

I definitely want to do something mexican. Tacos, fajitas, quesadillas, etc.....

I've also hear of quesdilla stations! Also a make your own guacamole and having it served in martini glasses with shrimp and tortilla chips!

Paella is traditionally a spanish seafood dish and comes in many different varieties but usually has rice and different seafood/meat in it. Here is more info on it. http://en.wikipedia.org/wiki/Paella
At my wedding we're having a pasta station, a meat carving station and a paella station cooked to order with Chicken, Shrimp, Clams, Mussels and Chorizo.
For the sushi lovers, how about a sushi chef making rolls and nigiri? Or have just a station with various sushi?
Instead of a taco station you could have like mini tortilla bowls and have chicken, steak, lettuce, toms, cheese, etc and people could make little taco salads.
We are thinking of doing a cuban station with mini cuban sandwiches, 1905 salad, and black beans and rice. Also considering a burger slider station with a topping bar - like blue cheese, grilled onions, bacon, and a bunch of other "gourmet" toppings.

We are doing a heavy hor d'oeuvres recpetion with a few stations thrown in there, but so far I havent seen any rocking station ideas. We are looking into doing a taco station and a pasta station, but I feel like, while delicious, they are also very common......
Have any of you tried something different, seen something different, or heard of something differently awesome and delicious???????
