Usually chat is overrun with dinner plans, but it isn't today (except with my eggplant parm overreach).
So what did you have for dinner?
Soup and rice. Haha. We sound impoverished but it was warm and tasty. :)
Beef stew! And it was even better cause my mom cooked it and sent us some leftovers! It was delicious!
I had pasta w/ a tomato sauce & salad... DH also had some baked Chicken... I had planned on the chicken too BUT baby in the belly decided when pulling it out of the oven that they didn't want it anymore. lol

Veggie Lasagna and Chicken Satay w/ peanut sauce
I've had a horrible night, meal wise!
For lunch I had delicious leftovers - black bean and grilled steak tacos with wild rice. So healthy and tasty!
After work I went to the gym and promptly at 2 fruit by the foots, a bowl of popcorn, and a bowl of brown rice. So random. I need my husband's season to come over so I cook real food again.
Now I want beef stew. Dangit.
Leftovers... Vodka penne and garlic bread. Not healthy, but very delicious and totally necessary after a hellish day at work!!
Ok, so what's up with the soups? Is it cooling off on the East Coast or something or does it just feel right because it's fall?
I'm excited for soups again. We do a killer french onion and potato leek. I love tomato, but I need a good recipe.
@tksjewelry: Awesome! The other night I just had a Hagan Daaz bar. (and that was after running!)
I made some crispy oven baked chicken that my husband likes and tried a risotto for the first time tonight to go along with it and it turned out great. 
@Mrs. DG: I love french onion, but I think cabbage soup is my favorite. I still can't copy my moms, I dream about that soup.
@Mrs. DG: I want both of those soups. Honestly, they can be in the same bowl.
@tksjewelry: Right there with you, sister. We had two buck chuck at our rehearsal and reception and have a few extra cases. We are moving in 3 days so I am just trying to reduce what has to be moved. Just being helpful, that's all. :-)
Asparagus, and collard greens. Mr. had some leftover homemade Chicken Tikka Masala too. We are so weird.
@Mrs. DG: Honestly it was cold, wet and dreary here in NYC. I had soup for lunch... My body was totally craving it after the extreme change in weather.
FI is making spaghetti and meatballs. He makes his own sauce and turkey meatballs. He also uses Ronzoni's Smart Taste spaghetti to keep it on the healthier, low cal/WW Points side. I'll probably cancel that out with something unhealty later this evening, though. :)
@Aure: That's not canceling, my friend, that's BALANCING! ;-)
@Aure: I use it all the time. Like today - I ran three miles, but then ate 2 fruit roll up things. My body obviously needed the "fruit." It's science.

I just had a salad with carrots and mushrooms and a PB&J. I wasn't too hungry tonight and didn't feel like making a big mess!
DINNER HAS NOT YET BEEN HAD. But when it is had, a vegan Nicoise salad with green beans, red potatoes, cherry tomatoes, and garlic tofu log will be had.
Two oreo cookies and a small glass of milk.. How about that =P
DH made home made chicken nuggests tonight and served it to me plated with four different sauces (really dude? He's cute though...) and a side of Velveeta shells and cheese. I had peaches for dessert. It was pretty delicious.
@Aure: Yeah, you blend the tofu with some garlic and spices, shape it in a log, and bake the mothereffer. It doesn't always hold its shape, but it has the consistency of goat cheese and is mothereffing delicious.
I had homemade chicken caesar wraps. It was the first time I've cooked in so long! I've been so busy!
Tonight was hot dogs but last night was amazing. Quasi- Shrimp Peasano with Whole Wheat Linguini
@LMD84: That actually sounds delicious. I really like Quinoa
Pot Roast that I started at 6am. Yuuuummmmmm
Oh and I made little ramekins of low-fat chocolate mousse!! It was delicious though I pretended it was more delectable then it really was since I'm trying to eat better!
My SIL made homemade roasted tomato soup with coconut milk and lime (somehow, it worked really well), and I made gorgonzola grilled cheese sandwiches.
@Mrs. DG: It's been cold and rainy and gross here for days...definitely soup weather. Last night I made chicken and dumplings.
@Beluga: Sounds much more appetizing than I had originally envisioned. My FI is a tofu fanatic, I second the recipe request!
