I always choose beef over chicken, but if you are going with only 1... Chicken is the more crowd pleasing option. Some people who eat meat, don't eat red meat, so that's a concern with only offering the one.
Have you tasted them both? They both sound good. You're also already doing a slider during cocktail hour, so that should satisfy any red meat cravings..
Personally, I like the sounds of the beef option over the chicken...BUT, $20/plate is a big difference! And, it sounds like your guests might even get full during the cocktail hour (I'd be stalking the crab cake server!!!!), so given that, I would probably go with the chicken option.
I don't eat red meat so I'd be pretty happy about chicken :)
Plus, as I understand it... people can be kind of particular about their steak. I don't really understand how weddings do steak because what if one person likes it well and another rare?
I'd say go woth the chicken. With so many people being health wise these days they will probably want chicken anyway.
I would choose the beef because it sounds great.. But if you want to make more people happy go with the chicken.
Why do weddings have to be so expensive?? Argh, in the economical mood I find myself, I'd go with the chicken over the beef. If you have a guest list of about 150, that's $3000 
Go for the chicken. 20 bucks a plate is a HUGE difference.
No one needs to know that beef was even an option. Without the choice, I wouldn't even think twice, you know, I wouldn't be sitting there thinking, "man, I wish they'd had beef instead of chicken." I just be thinking, "mmmn chicken, nom nom nom."
I don't eat beef, so itw as an easy choice for me. Most people eat chicken but not everyone eats beef. Are you going to offer a vegetarian option? Usually that is cheaper than any other.
I say chicken. I think it would please a larger majority. I personally only eat red meat because I have to, where as I love chicken. I know quite a few people like this also.
I chose the second option...err...I'm not even sure I know what a filet of beef is...lol 
Beef all the way. YES YES YES! (Most people serve chicken, so I think beef is the way to go ;) )
I prefer beef, but many more people like chicken I think. Plus, it's more affordable for you. I would go with the chicken!
I almost always choose chicken, unless there is a fish option available. I feel like wedding beef is rarely done well...it's very difficult for a caterer to cook that many pieces of meat to the temperature preferred by each guest. And I don't like well-done beef, so I usually skip it entirely.
Even though I don't personally care for chicken in banquet settings (it never seems to get cooked properly which is not safe if it is undercooked), that will be the better option since many people do not like horseradish even if they like everything else with the other option.

In an effort to keep costs down we are only offering one choice along with a silent vegetarian option. Chicken is $20 bucks less then the filet which makes the cost significantly cheaper but I want to serve food people will like. We are having an outrageous amount of food for the cocktail hour, crab cakes, sliders, fish tacos, etc. and aren't sure how hungry our guests will even be.
