I will be meeting with a few cateres in about 2 wks. I already have a menu in mind for cocktail hour and for the dinner buffet. The food is very important to me so I haven’t really set a budget for food. In my area everything seems to be below the average cost.
Should I give the caterers a budget or just see what they come up with? I don’t want to be overcharged just because I’m willing to pay

I had to tell caterers my budget upfront. But that is because I was working with the “preferred” caterers for our venue and they are rather expensive. I didn’t want to waste my time or their time by having them create a menu for me that would be so far out of my league. The caterer I am working with, who knew my budget up front, is now willing to work with me to revise the menu and tailor it to FI and I, but stay around that price point.
I had to provide my budget up front because I needed to narrow down my realistic options. If you have an idea of what your caterer charges then you could ask them to come up with a menu on their own wihout a set budget in mind. You might get a really creative menu that way. Or you could tell them a range and get line items that you could add/remove depending on how close to your max budget you are willing to spend.
