Were trying to keep costs down at our wedding so we’re considering doing a DIY dessert buffet. Has anyone else done this? We don’t want to do lollies, but more like slices, mini cupcakes etc. How did you decide what to serve and how much you would need?
Any ideas would be great!

We are doing a combo dessert/candy buffet, which will include candies, chocolate covered pretzels, nuts, 2 ferrero rocher toparies and 2 sucker toparies, cheesecake, brownies, cupcakes, and more.
We are inviting around 114, but we only expect 60 or so to show.. we are kind of winging it. Our families are big on sweets, so I’m not concered about having leftovers. We are filling an 8 ft banquet table though, if that helps.

@duchiewoo: No! I don’t think we’d have time to actually make everything ourselves, as we have to set up our venue ourselves the day before. We are getting that type of stuff at Sams Club.

I did a DIY dessert buffet. You can look at my wedding recap if you’d like to see the details. It was probably the most fun thing I did for our wedding. I had 3 different cakes from a supermarket, cookies, candies, cake pops, rice krispy pops, french macarons, brownies, regular and mini cupcakes.
My guests loved it and so did I.

@duchiewoo: I did a sweet n salty buffet and baked everything myself to save money. I used ribbon and cardstock I had leftover from making invites/decorations to make decorate some baskets and glass containers. I made strawberry cake pops, honey mustard pretzels, white choc pretzels, caramel chex mix, cheese straws, etc., and packaged the items. Since my most of my guests were flying, I wanted them to be able to take snacks for their trip back. I would recommend doing test runs of all your recipes well ahead of time. You’ll also want to test for “freshness” to see how far ahead you can make each of the items (i.e. I could make cake pops 1 week and refrigerate, but I had to bake the cheese straws the morning of my wedding).

great thread! We are doing a dessert buffet but haven’t figured out exactly what it will have on it yet.
I’m thinking i’ll have my grama make a few of her amazing pies, probably blueberry and apple?
hoping to get a few sams club cheesecakes (which are actually really great!), maybe with some toppings too…
brownies, my gramas famous maple crumb cookies (they are maple producers), etc.
