So we are not going with catering to save money. I didn’t want to do something real complicated, so we are doing Italian – Lazagna and alfredo with broccoli as a non-meat alternative. I am actually getting breadsticks catered, and purchasing stuff to make salads. How soon can I start buying stuff? My wedding is Sept 21. Can I buy the pasta and canned sauces now? How soon can I buy the meat (if it will be frozen)? I don’t want to buy anything too early, but it would be nice if I could start getting things as soon as possible.

I think you can buy pasta and canned sauces now. the salad stuff I wouldn’t buy until the day before. Also, the meats I would buy that week just to be on the safe side.

We are doing a portion of our own food, and catering the rest. We are going to do our own salad bar & nacho bar, along with all cocktail hour food.
We’ve purchased what we can for the salad bar [dressings, courtons, squeeze bottles, bowls, plates, ect], and we were able to buy everything we need for the nacho bar except the chips [meat, cheese, jalapenos, crock pots, ect].
We aren’t able to get most of the things for cocktail hour, as lots of it is cold stuff [cheese, sandwiches], so we’ll get that two days in advance.
We also bought all of the coffee, sugar, creamer and things we needed for drinks.

ahough2: As long as it will be frozen you can start buying meat up to a month in advance. I would not purchase any sooner for risk of freezer burn.
