We did up menu cards and put them on the tables. They made nice mementos for some people (grandmothers, etc.) and I'm planning to use the one from our table for our wedding scrapbook.
You don't need to have them, but they're a nice touch.
No it is not necessary for you to display the menu. I had a family style dinner for our wedding and all I had was a DIY chalkboard with the menu and that was more than enough. That was a last minute project.
If you have time, go for it! It's always nice to know whats coming. But I don't think it's something you "need" to do.
They'll see the food when it's in front of them - so I don't really see a need.
I don't think you HAVE to display the menu (I voted no), but if you have time for menu cards I think it would be a nice, personal touch. It's by no means a necessity, though.
We just used a giant chalkboard (which my dad built) for our menu instead of having individual menus at the placesetting. Was trying to save on paper and be a little eco-friendly.
I don't think it's a "must have", but it's a nice touch if you can afford it or want to take the time to do it.
Here is what I did. I used a canvas and painted it with chalkboard paint.
It is a non-pro pic of my drink menu...I had one similar for the Dinner menu. 
I agree with everyone else. It's not a "must have" but it is a very nice touch. Especially if you are serving different dishes a lot of your guests may not be used to :)
We will be putting a printed menu on each table. Our guests are selecting beef, chicken or salmon-- but that's all they know! I'd also like to give them a heads up on the salad & the dessert options!
I don't think it's necessary if it's really simple food- but if there are tons of weird sauces/ingredients it would be nice to have a menu so picky guests can know what's in their meal. But defintely not necessary.
I don't think it's a must-have either. It actually might confuse people, maybe they would think they have to choose?
We're doing a buffet, and I want to do them so people know what's up there and don't fill their plates too early and then see something they want!

We are having a sit down meal - it is country style, where they bring the platters to each table and you serve yourself. Do I need to display the menu somewhere?
Edit: I shouldn't have worded it "need to" but more... "what is everyone else doing?"
