I saw on your profile that you're in Houston! I'm an Austin bride myself, and my sister was a DFW bride! She danced to the song, "Waltz Across Texas" for the father/daughter dance, and it was really sweet! There are many different versions out there, so you may want to check out iTunes to see if you can find one you like! 
Random songs I know can be waltzed to: Kiss from a Rose by Seal, and Ice Cream by Sarah McLachlan.
Boy and I will be dancing to "I want to know your plans" by Say Anything (the link is an acoustic version), and we also considered "Salty Eyes" by The Matches. Both are kind of indie rock and definitely non-traditional... but we love them :)
Are you looking for a true waltz, as in ballroom, 3-count, the whole nine yards? Or just a song you can waltz to?
