So I may have this story wrong but I am pretty sure that she is modeled after Mrs. Bee.

Meerkat is right! It is Mrs. Bee, the creator of wedding bee. So those calling her Bee, you are right! :)

No, it's not Mrs. Bee. :-) Although the flowers were indeed modeled after Bee's flowers from Belle Fleur!
