Who walks you down the aisle is such a personal thing…I’d start by telling your mom in no uncertain terms that you’d prefer she be at the end of the aisle waiting for you.  Are you having a fairly traditional wedding?  B/c you can always “blame tradition” for why you want your step-dad to escort you.

In terms of incorporating your grandfather – could he escort you halfway down the aisle, then ‘hand you off’ (sorry, can’t think of a less loaded way to say that) to your stepfather for the end of the walk?  Personally, [I’m getting married on a dock] I’m walking with my mom and dad from the house to the end of the pier, then they’re walking ahead of me down the pier so I’ll eventually approach the “altar”, as it were, by myself.  This suits me and the ceremony FI & I have designed…hope you can find a solution that suits you just as well!

you can have your mom and FMIL light candles for the unity candle. They light them and then you take the candles and light the unity one.

or if you want to do the sand one you can have them pour in sand and then you and fiance do it.

My mom wanted to walk with me, but there was just something personal about having my dad do it, so my mom and MIL actually lit our unity candle. It is actually a pretty signifcant moment, at least for me it was. My mom took my candle, MIL took my DH’s, and they lit them and handed them to us so we could like the actual unity candle.
