Honestly, many of them are very professional and very used to changes in things--especially the cake! And if they're professional they'll also just keep their mouths shut. If it takes a lot of extra work, they can add charges and notify you!
I don't think you should worry too much. I do think the way they do things now is changing though--for example, my DJ has an entire online section where my fiance/family or I can log in and pick songs, look at vendors and look at options he can provide--and my guests have a website where they can make requests! It's awesome and a direction I think a lot of vendors will be going towards, where they can get your input and where it's easy to access and change, via internet.
So... don't worry!

So, when we started wedding planning a year ago this month, I really thought I had it all figured out. I assumed I would be one of those brides that could go right to her vendors and just say, "This is what I want" a whole year out, and that was that. I was right for the most part. My fiance and I knew exactly what kind of venue and photographer we wanted, and we knew exactly what kind of flowers (especially since we're only doing bouquets and bouts, no centerpieces). However, I feel like I'm driving one vendor in particular crazy: our cake baker.
I feel so awful, but I think we've changed our mind about three times with our cake, and I e-mailed her this morning to change it yet again. The first time wasn't anyone's fault, though, because our baker didn't know we didn't want fondant, so she couldn't do the design we wanted, so we worked with her a few more times to get what we wanted, and we settled on the final one about a month ago. It hasn't been sitting right with me since then (it's really traditional, and we're not that traditional), so I e-mailed her this morning to make some changes to it. I'm still waiting to hear back, but I get nervous that I'm irritating her, even though she never seems to mind.
Do you have a vendor in particular you feel like you're bothering? I know that you're paying professionals to get what YOU want, so in reality, I shouldn't feel TOO bad because we're still three months out (and I honestly won't be changing it again!), but still. Oy!
