Anyone have some great dutch oven recipes?  We're going camping next weeekend, and I'm trying to put together a meal plan.  The difficult part, is that our daughter absolutely throws a fit lately if we try to feed her.  So everything I need to cook needs to be soft enough for her to eat (i.e. no meat unless it's cut up in very tiny pieces) and finger food-y so she can feed herself (i.e. no soups/stews/chilis).   So far, I figured we could do baked potatoes one night for dinner, and breakfasts and lunches are pretty well taken care of.

Any ideas and recipes beyond that are welcome!

@ktisthatbees:  Lol, I know, right?  It has been a serious struggle at our house to make regular meals within those parameters, but planning for this camping trip is so much worse.

ETA:  I've never even seen that website.  Thanks!

When we camp, we generally do hobo dinners in foil packets and save the dutch oven for dessert...like pineapple upside down cake or some sort of cobbler.

@Mrs. Spring:  I've seen a bazillion different versions, but what we do is just cut up a bunch of veggies (typically carrots, onions, potatos) and add in either cutup steak or ground beef and then wrap it in foil packets and let it cook in the coals of the fire.  I love it because you can make the packets ahead of time and store them in the freezer, so when it's time for dinner when you're camping, you just pull out the packet and toss it in the coals!  It would also be easy for your little one because you could prepare her hobbo dinner/pocket the way she would like.

@Mrs. Spring:  I think you'll like it.  The possibilities are really endless as to what you can cook!

@JsDragonfly: oh yeah! Hobo dinners, we used to make those all the time in girl scouts. Loved to chop up potattoes and chicken and throw in some bbq sauce. . so good!

Does she eat pasta? If you have a camping stove you could make that. We always do mac and cheese when camping with the girl scouts... we're used to picky eaters.
