Easy dinner ideas anyone?

    Anyone have any easy dinner ideas? I really don't feel like going shopping today. I don't have much in the house, but I'm sure I could pretty much improvise if it comes down to it.

    stir fry? pasta sauce with ground beef and veggies? grilled cheese sandwiches and soup?

    Pick up a rotisserie chicken and some salad =]

    Otherwise, for "easy", my easy is like, eggs on toast. Or a turkey sandwich and soup. Or grilled cheese.

    Tuna salad with frozen veggies? I usually have canned tuna/ mustard/ mayo/ bread lying around and veggies in the freezer.

    LOL I would totally go out for a rotisserie chicken, but that would be defeating the purpose of not wanting to go shopping for soup stuff. Maybe I should just bite the bullet and go...there is leftover turkey in the fridge that I need to use. I LOVE grilled cheese! He hates it though :(

    PB&J!  Bring back the child hood!  Or maybe some mac and cheese?  I put a little hamburger in mine if I have it.  Or spaghetti is always a good stand by.

    Oooo gotcha. we actually have a rotisserie restaurant RIGHT on the way home. Like, 1/2 mile away....so i could technically park super close and get away with not picking one up at the store.

    leftover turkey?! do you have broth and veggies? TURKEY SOUP!

    I don't have much left for veggies. I ate them all. lol. I am home today too, so the less I have to leave, the happier I am. I can always stop at the store on my way home on Friday morning. (I work night shift in the NICU).

    You know, the longer we are married, the more I realize that hubs is a very picky eater! huh, who would've guessed? I didn't think Army guys could afford to be picky.

    I make stuffed chicken breasts when I want to do an easy dinner:

    Preheat your oven to 400

    Sautee garlic and spinach in a pan until spinach is wilted

    Make a pocket in your chicken (don't cut all the way through)

    Stuff with spinach and cheese (I like goat, but I've used leftover brie that I had from a party and it was yummmmmmy!)

    Seal up your pocket with toothpicks

    Brown your chicken in the pan; transfer to baking dish and cook for about 8 minutes

     

    Sooo easy and fast and really good!

    Oh, my fave side dish right now is spaghetti squash; you just cut it in half and cook it until it comes out with a fork.  I serve with a little butter and salt & pepper, or you can put marinara sauce on it and pretend it's pasta :)

    Can you tell I'm trying to be low carb? :)

    Chili .  It is super easy and the fiance LOVES it.  In fact he will often request my chili.

    1 can pinto beans

    1 can black beans

    1 can of corn

    2 large cans of diced tomatoes

    2 packets of McCormick chili packets (I like 1 packet of mild and 1 hot)

    Cut up green peppers and onions and brown 1 lb ground beef/turkey.

    You can cook it over the stove for about 30 min. or in the crock pot for a few hours.

    YUMMY!

    Serve with tortilla chips, cornbread, or sourdough bread.

    @Laural- I completely agree. The more I think about attempting to cook anything the more I think "It would be so easy to just go pick up Chinese..." Then I get to thinking last time we got takeout we picked it apart saying how they should have added this or that and how we could've made it better. :/ I'm so bad at that. I need to stop and just enjoy takeout for what it is: an escape from cooking!!

    OH dang it. I just saw lemons on TV and realized we don't haave any. Looks like I get to go grocery shopping anyway...I'm only going for produce! LOL

    @Miss Lily,

    I have an Army guy. THEY ARE SO PICKY. It's all that on-post defect food they get....totally spoiled by it.

    "no i'm not making wings AND pizza for dinner"

    "but whyyyyy?????!????!"

    lol =]

    Just toss him a can of spaghettios, a ghetto 1950's can opener, and tell him it's "practice for the field" lol

    Back from my "outing" to the grocery store. I hate grocery shopping! Seriously. Expecially around holiday times! :( There were so many people out shopping. I just grabbed what I needed and got in line...then realized I forgot stinkin lemons! So I had to run back to the produce area and get the lemons. I am so glad to be home...back in my pjs. Poor hubby. LOL. Hopefully I muster up some ambition before he comes home.
