usually leftovers. If I have none a salad or whole wheat baguette and bruschetta or salsa and chips or crackers and cream cheese and yogurt, fruit and a 100 calorie snack pack.
Slim Fast Shake, Soup, pre-made salad, veggies and shrimp with olive oil, greek yougurt with high fiber oats, apple & peanut butter... these are my go-to's for work days:)
I like to make a big bowl of chili and portion it out over the course of the week. The beans are filling and the spice makes it more exciting than bland sandwiches!
For something really quick I throw whatever veggies I have in a tupperware container and bring some hummus.
I'm all for things I can eat cold or room temp. Our break room is crazy around lunch, so good luck getting a microwave.
I usually bring salad, I'll chop everything before hand so all I have to do is toss it all together that morning and bring the dressing on the side so nothing gets soggy. Pasta salads you can make ahead are easy & good too.
I love breakfast for every meals, so I do hard boiled eggs, breakfast sausage, and greek yogurt for lunch quite frequently.
All of these are awesome, but definitely require more advance preparation than my usual lean cuisine lol. All I do is pop that sucker in my purse and then put it in the freezer once i get to work.
Microwave soup is easy too...already comes in the container. Actually it is one step less than the lean cuisine because you don't need to stick it in the freezer!!
@kate169: do you like veggies? I usually bring a bad of steamers (my co-workers he me) and let shrimp defrost in the fridge. Or you can buy the bagged salad (just remember to wash it) and chop toppings on a Sunday night for the whole week. Soup is a purse thrower too:) I'm like you, I like to just walk out the door in the AM- I don't spend more than 2 mintues in the morning getting my lunches together!
I pre-make/package all my lunches on Sunday afternoon. Usually I like to make big salads. What's in them varies from week to week - e.g. last week I did kale, veggies, homemade baked falafel and lemon tahini dressing, sometimes I do southwest salads, sometimes asian chicken with peanut dressing etc.
So on Sunday I prep/chop all the ingredients and make the dressing - this usually only takes 30-ish minutes. Then I portion them all into individual tupperwares and have one large jar of dressing that I use throughout the week. LOVE big salads for lunch and love the variety from week to week!
When I worked at night I would try to make mass meals for my FI. One thing I did for him was chipotle type burritos. I mass made them, froze them, and they are good in the freezer for a good amount of time!
@MRSLMA: Sometimes I eat the "just for one" veggies at work but a bag of steamed is a good idea. So is the shrimp. I could handle that. Maybe with rice too. Lol how annoying would I be if I had a rice cooker at my desk.

I buy the big container of mixed greens and top with whatever I have handy ex nuts, veggies, olives, feta, croutons, oranges, dried cranberries.
I do a lot of prep work on Sundays to cut down my lunch making time on weekdays.
I usually make a soup recipe and pre-portion out lunches. I'll grab some crackers, veggies, slice of bread, something to go with it. Or I'll portion out left overs.
In a pinch I will do as PP said and grab my back up hardboiled egg and some sausage!
I also keep a few LC's in my freezer so I have no excuse to eat out or eat too poorly.
Arugula is one of my favorite salad greens. I like it plain with ranch dressing, or topped with strawberry slices and balsamic vinaigrette. I find that if I bring one big plastic tub of organic baby arugula and have a little salad every day, I don't mind eating a Lean Pocket with it. It's also good topped with corn, feta, and balsamic vinaigrette.
When I'm good, I bring the following to work every Monday so I have a choice of lunches: tub of arugula, apples, whole grain bread, 1 box of Lean Pockets, 2 Lean Cuisine meals. that way, I don't have to worry about bringing something in every day.
i usually like something hot for lunch, so i always try to plan my dinners so that i can have re-heatable leftovers.
my fiance has been traveling for most of this week and last week, so i've been feeling especially lazy. for lunch ive been packing hummus and triscuits with greek yogurt, string cheese and pistachios for a snack later. it's been great!
Soups, wraps, breakfast-type sandwiches with egg for protein, a baked potato...
I do the same thing with salads early in the week. Portion them out into bags (I have a big bowl and silverwear that I leave at work and wash after each use.) I also portion out different dressings into throw away containers. I also do the chilli idea for my SO.
About once a month I go shopping for work, I buy a case of water, and snacks and put them in my cubby at work. And with my weekly shopping I also portion out fruit so I grab a salad and a fruit and I'm good to go!

I need an easy lunch I can grab and go that doesn't involve a sandwich or a lean cuisine (and is relatively healthy). What do you guys take to work for lunch? I like to stay within 300-400 calories for lunch.
