We are about to go on a week-long vacation with my fiance’s family in a beach house, and I would like to help out with meals occasionally throughout the week. My fiance and I are vegetarians, and I was wondering if any of you have any easy vegetarian recipes I could make that would be tasty to share with the whole family. I have a few things I can make, but I do not do too much cooking and fiance’s mom is a great cook, another person we’re staying with is basically a gourmet cook, and I don’t want to look silly. Help!
My meal ideas:
–Basil tomato pasta w/ a salad
–Greek Yogurt Egg Salad Sandwiches w/ chips or a salad (for casual lunch)
–Avocado & Hummus Quesadillas w/ fruit salad
–Ramen noodle veggie stiry fry w/ spring rolls
I don’t know how often I will cook, or be expected to cook, but I’d love some new recipes or meal ideas just in case!

coachhw: Here are my suggestions for feeding non-vegetarians:
Veggie Lasagna (or any type of pasta)
A curry with saffron or basmati rice
Bocconcini Arancini (served with a salad)
Eggplant Parmigiana (I think Americans call it eggplant parmesan?)
Vegie Slice or fritatta with salad
Asian Bean cakes
Pumpkin soup served with crusty bread.

coachhw: If you want to fancy it up a bit but still do a pretty easy recipe then I did this carrot and coriander fritters and haloumi stack for a dinner party once that a vego was attending. It was really good!

Artchoke hearts with beans! I tried out this recipe recently and it was amazing! I would not have guessed something that easy could be so tasty esp. as i used canned beans. Just make sure you have good olive oil.

Veggie fajitas! Red, green, and orange bell peppers sliced into strips along with onions, zucchini, and mushrooms. Stir-fry with some fajita seasoning/marinade (both found in the Hispanic section at the store), then put onto tortillas with salsa, cheese, and sour cream. The dairy products can be omitted if you’re vegan. Squeeze a lime wedge over them, and eat!
You can also make some Mexi-rice to go with it. Veggie fajitas are easily my favorite dish when I’m entertaining.

danibelle: I do something like this as well but I add red kidney beans and chickpeas in witht he capsicums. Then I bake them in the oven covered in cheese and add sour cream and gucamole.
You can also use Tofutti cream cheese as a substitute for the sour cream for vegans.
