I vote clay… if you’re doing an Etsy shop and shipping them around, you may have issues shipping something edible. Also, clay lasts forever and can be purchased at any stage of the wedding planning process!

You could try to offer both for a month or two and see what is most popular?

Both my sisters do clay toppers…and are booked out 6 months in advance. They use to make sugar ones untill people kept calling to say they had been eaten by ants, melted in the sun or have lost colour. I would go with clay all the way.

Honestly, I have never heard of edible cake toppers.  I do agree that you may come across an issue with the edible cake toppers though when shipping.  I vote for clay.  It seems like they would sell better.

Crystalrae had a great suggestion of offering the both for a month or so to see which does well!

Oh and clay doesn’t dry out like the sugar ones…so if they need to be altered then they can be before they get baked

Also the edible ones are most likely regulated by FDA, they would need to be prepared in a certified kitchen and subject to labeling and nutritional analysis. Maybe not if they are listed as novelty only, I would double check on that. Etsy has a lot of info available since they do have an edibles section.

I would go for clay for cakes, and edible for cupcakes.

And if you know how to sculpt dinosaurs I might be in your target market. 🙂
