I absolutly LOVE your popcorn idea! Being a popcorn lover myself, I would be delighted to see that at the end of a long night of dancing and partying! I may have to use that idea myslef... :)
Check out Garrett's Popcorn, a must-visit if you are ever in Chicago (http://www.garrettpopcorn.com/). They have the best carmel corn and will ship to anywhere! Easier than baking cookies!
I agree about the candy bar with the matching colors, etc.. So we are doing a variation on that with a truffle bar. We got 5 different kinds of truffles. People can eat them there, and we got little truffle boxes (that hold two pieces each) for people to take some with them. It will be set up near the coffee mid-way through the night.

We're renting a popcorn cart. For $115, it comes with the cart, popcorn, bags, etc. Our caterer is handling all of it.
We're also doing a cookie bar -- it's not a big deal if you ask friends and family to make the cookies for you! It's a Pittsburgh tradition to have cookies at weddings, so we're making the tradition a little more trendy.
I contemplated the cookie bar idea as well, but also came to the realization that baking was not going to happen. So I switched over to apple cider doughnuts from a local orchard (October wedding) which i will be wrapping individually in small wax bags with a sticker of our logo... I'm considering mini apple cider jugs if I can find them as well. I swear I saw a popcorn buffet in Martha Stewart a while back, you should check her website.

We're doing a gelato cart! We were able to rent one from a local yummy italian restaurant, and it will be stocked with 5-8 different flavors, with cups, cones, spoons, etc. Everyone is super excited about it!

I'd like to have a favor at the end of the night, but I'm not sure what to do. Candy buffets seems pretty played out, so I was considering a popcorn or cookie buffet, but they are more difficult logistically.
Has anyone found a place for bulk popcorn? The cookie buffet would be fun, but I really don't want to bake 500 cookies right before my wedding.
Any other ideas for end of the night favor?
