Our wedding is in May and I am trying to solidify the reception dinner menu with our caterer. We are having a buffet-style dinner. I am curious about the side items. I definitely think it is enough food, but just wanted to see what all you Bees thought!
We are having carved beef brisket, smoked chicken, DELICIOUS mac and cheese, and 1 more side (something green, perhaps creamed spinach) and of course rolls.
Before dinner, there will be veggie shooters and strawberries with amaretto fruit dip.
Does anyone think I need to offer another side item? I certainly do not think anyone will leave hungry, just didn’t know if another option was needed. But I do have to remember you can’t please everyone and not everyone is going to like what you choose no matter what it is.

@ssbridenc2014: I think that sounds delicious and like enough food. Mmm brisket. The only concerns that come to my mind is the usual question of whether there will be alternatives for vegetarians (if the mac and cheese isn’t completely vegetarian for example) and/or people with allergies.

Maybe a salad or another veggie in there would make it complete for me. Everything else sounds awesome!

@ssbridenc2014: Personally I’d have a lighter side as well (as mac and cheese and creamed spinach are quite heavy) like a green salad or something.

I’m not sure about your family, but most of mine doesn’t touch spinach!

I personally would nix the spinach- not everyone likes it and it is pretty heavy like lollybags said! A lighter side would be nice 🙂

@lynnielou33193: Thanks everyone! I will chat with my fiance about nixing the creamed spinach. I had thought about green beans, but he just doesn’t like green beans at all but I want him to enjoy the food as it is his day as well! Any suggestions on a lighter side? Would just mac and cheese and a salad be enough, or are you all thinking another side ALONG with a salad as well? Any suggestions would be greatly appreciated, thanks!!

I would definitely do salad and a light veggie dish. I don’t think anyone will go hungry with what you’re offering, but i think people will appreciate a healthy veggie side

That’s too much creamed and fat and meat for me, a garden salad would be a good addition.

Agree with everyone who said a lighter veggie and a salad. Alternatives would be sauteed or roasted broccoli or asparagus.

Definitely both a hot and cold vegetable – salad and maybe sauteed kale? Id be avoiding the mac & cheese at your wedding because it’s heavy and so would want to load up on good veggie options.
