Me and my boyfriend are dieting together and have been trying to think of unique and exciting diet foods for each meal. Last night we had Caesar salads for dinner with torn up bits of roast beef mixed in, and instead of traditional croutons, broke rice cakes into pieces and drizzled them with olive oil, covered with Italian seasoning, and baked them.
Bees-these were SO MUCH BETTER than traditional croutons. Such a healthier alternative too! Thought you guys would enjoy the tip.

ChicoryCreek: STOP that’s an AWESOME idea!! FI and I are gluten free (me by diagnosis, him by choice) so we can’t have croutons anyway but I loooove them. Thanks for sharing!!!

I make croutons out of parmesan cheese for a low-carb crouton solution. I put shaved parmesan in a nonstick pan and cook it until it browns on both sides. After you take it out of the pan it will harden and can be broken up to add some texture to a salad.
