@Lindsay12.31.2010: i know you said canned soups, but Trader Joe's has the BEST organic low-sodium soups in the box. I am obsessed with my sodium intake, and they make delicious Tomato and Roaster Red Pepper Tomato soup. They have low-sodium butternut squash but its a little too sweet for me.
I come into work with a bag full of my box soups...I love them for a quick lunch, esp now that its getting cold.
@Stammie16: I will have to check them out! TJ's is 2 hours away, but we go to St. Louis every other week or so for hockey, and I will be there Thursday-Sunday next week. Definitely checking them out!
I love soup for lunch! I HATE eating out, and try to do it only on a rare occasion. Lucky enough, I work at one of the independent businesses inside a wal mart. The deli section actually has decent choices of sandwiches, wraps, pre-packaged salads with chicken, and in the produce section they have great 100 cal packs of carrots and apples with dips. Also, I do a lot of lean cuisine too. I try to bring left overs from home most days, but the convience is great. If you are close to a walmart or other bigger grocery store check out the produce and deli!
Not a fan of canned soup at all. For a quick lunch, I love Amy's cheese enchiladas which are found in the frozen section, sometimes in the health food refrigerated area. Otherwise, anything by Boston Market or Tai Pei in the freezer section is great.
I know its a classic, but man I sure do love Campbell's Tomato. I could seriously put it in a mug and just drink that instead of coffee or hot chocolate to warm me up. Its such a comfort food, and microwaves so well, especially when I only have a half hour break.
I do love a good broccoli and cheese soup though..especially from Olga's Kitchen. (I know its not a good "quick lunch" but its so delicious!)
Today is NOT a quick lunch but i had to share this with you........this is in my slow-cooker for later on today, i cant wait. Beef Casserole, and dumplings will be added 1 hour before the end of cooking.

I make my own soup, then freeze it in individual portions to take for lunch, just as easy as canned soup, but so much better for you! I am on curried butternut squash right now, its great for fall! Its super easy too!
1 Large butternut squash, roasted until soft
1 Medium sized onion, chopped and sauted in EVOO in a large soup pot
Cover the onion in water, and add the roasted squash
Simmer until squash breaks apart with a fork
Blend until smooth, add a little bit of milk or cream to help it along
Season to taste with salt, pepper and curry powder
Easy as pie!
Progressive soups are great! I take a Corelle soup mug with me to work and heat it in the microwave.

The soup post inspired me to ask - what is your favorite canned soup? Soup is one of my favorite quick lunches - I don't buy the microwavable ones, I just buy cans and put in tupperware before work.
I get in the habit of eating the same ones though. I usually try to buy low sodium, since the sodium is ridiculous.
My current favorite is Healthy Request Minestrone or Pasta Fagioli. I also like Amy's Organic Lentil soup!
In the same breath, do you like any other quick lunches?
