Seafood salad wrap:
Multigrain wrap
Lettuce (from a bag, with veggies already mixed in
Imitation Crabmeat (I'm weird, I actually LIKE imitation crabmeat)
cooked shrimp
fat free thousand island dressing
Dump lettuce, shrimp and crabmeat in bowl, dress with thousad island, toss, pour onto wrap and roll it up.
Viola! Quick, easy, yummy. NO COOKING (you can by cooked shrimp at the market) 
Stir Fry Yakisoba with Chicken breast and whatever veggies are in the fridge!

Tonight it's udon noodle soup. It's about 300 calories when I make it....pretty easy too.
Pho!
Water, Beef broth, fish sauce, veggies... bring to boil, dump in beef.... voila.
My current favorite is channa masala (chickpea curry). I got the recipe from my best friend's mom. It involves chopping up some veggies and obtaining a packet of curry from an Indian grocery store, but after that, you're good to go!
@Beagle - you make it sound so easy! I haven't attempted it yet, but my mom makes the best pho ever. Hee hee!
This is a new fav from the Weight Watchers recipes (if you're looking for yummy healthy stuff, weight watchers has great cookbooks).
South Indian Curried Chickpeas
-1 can chickpeas
-1 carrot
-1 cup peas
-1 can stewed tomatoes
-cumin
-cinnamon
-jalapeno pepper
-corriander
-3 tbsp plain yogurt
Chop the things that need chopping. Mix everything but the yogurt together in a pot and simmer for about 10-15 minutes. Stir in yogurt and service with brown basmati rice. YUM!
my udon soup was beef broth, a scrambled egg (you dump it in the boiling broth), noodoes, and seaweed.
Couscous with halved cherry tomatoes and fresh basil, mixed with balsamic vinegar and olive oil, and a light sprinkling of feta cheese (no feta cheese if you're really being healthy)! Yummy, and easy and quick to make!
Healthy Chicken Parm:
4 thin sliced chicken breast
2 cans diced/stewed tomatoes
1/2 cup part skim mozzeralla cheese shredded
1 small onion sliced
1 tb EV olive oil
cooking spray
lots of garlic (minced)
fresh or dried basil
Sauce:
Add 1 tb of extra virgin olive oil to a deep saute pan and heat on Medium. Add garlic, small onion, and basil. When garlic begins to brown and 2 cans of diced tomatoes. Bring to boil, then let simmer ( 15 minutes).
Chicken:
Spray a skillet with cooking spray. Quickly (lighty) brown chicken on each side ( about 3 min)Spray a baking dish with cooking spray. Spoon a small amount of sauce into bottom of baking dish. Arrange chicken in dish. Top with shredded cheese and sauce. Season w/ salt pepper, oregano. Cook at 350 for 10-15 minutes or until bubbly.
