Favorite Holiday Appetizer

    With all of these wonderful holiday parties coming up, I am trying to think of some delicious appetizers to bring. I love desserts but I cannto bake lol, so I'll still with the appetizers.

    I have a couple go-to recipes for appetizers. My hands down favourite is a bit complicated, but totally worth it. It's like a fancy bruschetta :)

    Get a french loaf and cut it into rounds. Toast them in the oven under the broiler. Spread goat cheese on top of each round (I leave the goat cheese on the counter for about a half hour to soften it up and get it to the 'spreadable' stage). Grab a bunch off Roma/plum tomatoes. Cut them in half lengthwise, remove any bits of stem. Toss them in olive oil & minced garlic. Place them on a foil lined baking sheet (if you don't put foil you'll ruin the baking sheet), cut side up. You may want to slice a bit off the bottom of the tomato to make it sit nicely on the sheet, otherwise they tend to roll around a bit. Make up a little mixture of 3 tbsp port, 1 tbsp balsamic vinegar, 1 tsp oregano, 1 tsp basil, freshly ground pepper, and 3 chopped shallots. Put a tablespoon or so of the mixture on each of your tomatoes and roast them in the oven. Bake at 450* for 30-35 or until soft and browned. Put one tomato half on the little goat cheese rounds. Enjoy!!!

    Count on at least 2/person with these. Everyone LOVES them! I'm at the point of doing 4/person, LOL!

    Maybe not an appetizer exactly but dammit I love Chex Mix. Like homemade buttery Chex Mix. I will hover over the bowl all night!

    MMMMM...BLT dip!!  So yummy!  Also, my Dad makes this awesome cheese dip.  So good!

    My most requested hot dips are:
    Spinach and artichoke dip
    Roasted red pepper and feta dip
    Cheesy crab dip
    Buffalo chicken dip

    Other small bites:
    Smoked salmon deviled eggs
    Bruschetta
    Cranberry and feta pinwheels
    Tex-mex pinwheels
    Mini-phyllo cups stuffed with a bunch of different things (fancy cheese and jelly, mexican type stuff, chicken salad, shrimp salad, etc...)
    Stuffed mushrooms
    Mini-quiches

    A big favorite at our house that sounds strange but is SOOOO good:
    Cut hotdogs in 4.  Wrap in bacon.  Place in a baking dish and cover the top with brown sugar and sprinkle with cinnamon.  Bake until the bacon is cooked.

    I love a spread with deviled eggs, shrimp cocktail, bruschetta, stuffed peppers with goat cheese, chips and guac...appetizers are so much fun, I honestly love them all!
