Favorite Homemade Soup?

    This Saturday we're going to a fall party and we are supposed to bring a homemade soup. I have noooo clue what to bring. I love all soups. I would really like to do something that isn't as traditional (chicken noodle, etc.) but I don't want it to be too out there for everyone.

    Any suggestions? Or favorite soup recipes?

    I'm making Olive Garden's Zuppa Toscana soup this weekend its delicious and pretty easy! I also love Chicken Tortilla which was suggested.

    We do a loaded potato soup which is easy and inexpensive. Or there is also broccoli and cheddar. Methinks we linke cheese in my house...lol.

    Now I'm craving homemade soup! Maybe tomorrow.....

    My two favorite soups ever, homemade or not, are clam chowder and creamy broccoli. Or cheesy broccoli is good too. And potato and bacon. Haha. I like chicken noodle but you're right, it is sort of boring and common.

    chicken tortilla is one of my favorites.

    i have to say that white chicken chili is ALWAYS a hit. at my house we top it with mozzerella cheese, diced tomatoes and avacado. it is TO DIE FOR!

    California cheese soup is definitely one of my favorites. I also like our crazy-hot all-bean chili.

    @Running Elley: I am adicted to sweet potatoes. I make so much stuff with them, scalloped spicy sp's, sweet potato and goat cheese raviloli, sp gnochi, and I made my first sp pie and it's all I can think about lol.

    I make good veggie chili, it would be a big hit at a party to bring a veg option

    sautee up some mushrooms, onions and one cubed sweet potato

    add one chopped jalapeno

    add two cans of diced tomatos, 3 cans of beans with liquid and one beer

    let the alcohol cook off and the sweet potato get soft (I also add TVP - textured vegetable protein)

    Add about 1 cup of frozen corn

    then I add 1 can tomato paste, one can of veg refried beans to thicken it up

    season with plenty of cumin, smoked paprika, 1 TBS cocoa, some brown sugar (I usually do like a teaspoon or 2), garlic, chili powder, oregano, salt pepper etc. however you like it seasoned.

    DH eats meat but he won't even let me make regular chili because he says its so greasy compared to this which has more flavor. I serve it with cut up avocado, sour cream, salsa, and DH's favorite hot sauce.

    If you like sweet potatoes, try Martha Stewart's lentil and sweet potato stew.  I make it in big batches for the freezer. It's really chunky and hearty.

    Butternut squash soup is also really easy, and all of my family love it. I started with this Chow Vegan recipe, but have tweaked it since. I make mine with coconut milk instead of silken tofu, and use liquid veg stock instead of bullion.

    My personal favorite is a butternut squash soup. We served it at our wedding last October and it screams Fall! at me.

    Matzah Ball! It may be too close to your average chicken noodle... but it's very easy and soooo delish!

    You just boil some chicken, add the veggies (carrots, celery, and onions) and add the matzah balls, we just use it from the box in the "ethnic" section at the grocery section along with the soup mix. The longer it simmers, the better it tastes, I usually let it sit there all day and serve it the next day. I also like to add some egg noodles and serve with challah. Yum!

    My family likes a potato soup that has green beans, bacon, and onion in it.

    I have a recipe for a Roasted Butternut Squash soup. It's extremely yummy and perfect for this weather. Roasting the Butternut Squash and Carrots gives it an extra dimension of flavor. I have to dig it up somehwere!

    Aha! Found it! I made modifications to the recipe as I do with all:

    This is the recipe I used. I added to it a head of roasted garlic, couple sprigs of fresh Rosemary and used butternut squash instead of acorn.

    The blender did not work so great to purée so I used the food processor instead.

    We were short on time so I bumped the temp up to 450.

    -----------------

    I roasted all the vegetables first, to add an additional dimension of flavor, added a bit of heavy cream, and finally some citrus to punch it up a bit. It turned out beautifully! I thought it was delicious and unusual!

    1 acorn squash cut in half, seeded
    10 large carrots, peeled and cut into 3 inch sections
    1 large onion, peeled and cut into 4ths
    1 Orange, the juice of (or you could use several tablespoons of Orange Concentrate)
    Olive Oil
    Fresh Thyme sprigs
    1/2 cup of Heavy Cream
    1 can
    low sodium chicken broth use vegetable broth instead
    1 soup can water
    Salt and Pepper to taste
    1/2 to 1 tsp nutmeg
    good shake of ginger
    small shake of allspice

    You must first roast your vegetables, place them on a heavy sheet pan and drizzle with a bit of olive oil, salt, and pepper and thyme and toss.

    Roast at 385 degrees for about 1.5 hours, stirring occasionally (I had to do it in 2 batches)

    Remove and let cool, you can then dig the pulp out of the the Acorn squash and put it directly into the soup pot with the remaining roasted vegetables.

    Add the broth and the can of water, and the spices, go easy at first you can add more later

    Puree in a blender our use your handy immersion blender, heat soup up to serving temperature

    Add your orange juice and heavy cream, taste and re-season as you like. I am a huge fan of ginger and nutmeg so I added more.
