While eating my delicious salad for lunch today I had a random though, even a couple of years ago I wouldn’t have put 1/2 of the ingredients in my salad that I had today. Growing up my mom always made salds the same way – lettuce, cucumber, tomatoes, croutons. I’m not a picky eater at all, but when I think of what a salad is, I picture what my mom made growing up, so things like apples & grapes seem unusual and like they don’t belong on a salad. In recent years I’ve become way more adventurous and love to add fruit, nuts, dried fruit etc. So now I’m wondering what else I may be missing out on. What are some of your favorite “unusual” salad toppings? 🙂

I hate cucumbers, tomatoes, onions, and all the “normal” salad toppings. I loveeee hard-boiled eggs, dried cranberries, and edamame on my salads!

Raw beets….gross to some I know, but their slightly sweet crunchiness is AMAZING in a salad! Just peel the beets, cut into little cubes and add to your salad. Dark red veggies are full of antioxidants.

my base is always spinach, dill, basil, cucumbers and sprouts
My extra veggies are generally a mixture of 2-3 of… shredded carrots, beets, jicama, peppers, berries, pomegranate, avocado
Then I add crunch of seeds/nuts and top with feta cheese
I also love to add a dollop of hummus
My go to dressing is olive oil and balsamic.

I crunch up Tortilla chips into my salads with southwest ranch dressing. It makes it so tangy and delicious. Sometimes I add corn or croutons instead of tortilla chips if I can’t find any in the house. I also really like to use pickle juice as a dressing. I am allergic to something in most non-organic salad dressings (i can only eat renees dressing, and it is expensive with a low shelf life) and found that extra garlic dill pickle juice on a mixed veggie salad with a bit of grated cheese is one of the yummiest things ever.

Pomegranate seeds, makes my salad 100 times better when they’re in season!
I also like to add the following (not all at once lol) avocado, feta cheese, jalapeños, beets, corn, walnuts, grapes, apples… Just depends on the type of salad!

Strawberries and almond slivers in any vinagrette dressing.
Apples and walnuts in vinagrette or itslian dressings
Hard boiled eggs, but I only eat the whites. Bacon, dried cranberries, raw red pepper strips, extra extra cucumber

Avocado cubes. yum!
I looove applewood smoked cheddar in my salads. Not that unusual but it’s seriously my only motivator to eat a salad. 😛
