SoontobeMrsKCee:   What are the NY laws about officiating?  You may be able to choose a friend or family member to do the honors.  

As far as flowers perhaps you can get a quote for bouquets and centerpieces, and then change as needed.  Or perhaps a brooch bouquet? Do you like those?

SoontobeMrsKCee:  Would DIYing your flowers be an option?  I purchased mine wholesale from fiftyflowers and costco and put them together the day before my wedding (keeping the stems long and in water).  It cost me $320 (including tax, shipping, etc) for 1 bridal, 2 BM, 2 nosegays (moms), 1 toss, 2 altar arrangements, aisle decor and petals for my tables.

SoontobeMrsKCee:  Search online for non-floral centerpieces. You will get lots of ideas. White pumpkins would work at that time of year.

SoontobeMrsKCee:  Honestly, the flowers were one of the easiest DIYs I did.  We hosted a welcome dinner the night before our wedding (some friends and I did the cooking), I baked my sweet n salty buffet and had plenty of time to put together the flowers.
