Get a recommendation/suggestion from the pastor at your FI's church who he/she thinks is good to perform wedding ceremonies and go from there. That way when you do call someone else, you can say "Pastor So-and-So suggested we call you..." and you have a good starting point!
We are in the process of interviewing with several reform rabbi's who perform interfaith weddings (my FI is Jewish) and we got them all from the phone book or recommendations from other people. It is kind of a daunting task but we want to make sure we fit the rabbi and vice versa. I am a big believer in positive energy and humor so those are the two qualities I am looking for in our rabbi.
Try hopping on your local knot board, too, if you've got one. Sometimes those ladies are helpful with officiant recommendations.

How did you find your officiant? I am getting ready to start panicking. My mother really wanted a friend of a friend who is a judge, but he will be out of the country. Then we asked the pastor at my FI's church - I was excited about him, as he is really nice and gives a good sermon - but he will be out of the country. We are going to call the assistant pastor next week. I suppose he will have to be in town, as the regular one will be gone for a month. But we are now on our backup backup plan, and it makes me nervous. If he's not available, do we just start calling churches?
