look at samples of work they've done, ask exactly what flowers they'll be using, have them do a mockup of the piece you're most concerned about (usually it's the centerpiece by default but if there's others, you could ask them to do that instead). get a sense of their style to see if it jives with your vision.
Which type of flowers will hold up best, shape of bouquets, particular flowers you want -- and don't want -- included...and of course price quotes! Good luck!
