I love your color scheme! I don't know if I will be much help but I would do cream garden roses, cream hydrageas with chocolate cosmos

Actually, www.fiftyflowers.com has flowers sorted by colors. You could start there for some ideas.
If you don't like the brown flowers, you can add chocolate ribbon through the arrangements and flecks of gold leaf to the tops.

decisions, decisions, decisions! 
This is a bouquet I did,, the roses are very beige and are called sahara roses, also it has freesia and Phalaenopsis orchids,, gorgeous combo, but can get expensive with the orchids but you can subsitute any flower for them!
also a cake idea with cymbidium orchids,, which can come in a creamy beige almost brown looking color! The other bouquet with those roses hase gardenias and stephanotis

i am not a flower girl at all. when i meet with my floralist, i want to be able to give her some type of idea of what i want.
my color scheme is: cream, gold and chocolate brown.
what do you think would go well with those?
