Fiance and I have zucchini coming out our ears from the combination of our CSA and our friend giving us bags upon bags of the stuff from her garden. We have eaten more zucchini bread, zucchini pie, and zucchini fries than we can stomach and have been running out of ideas for the stuff.
He visited his parents today and Future Mother-In-Law sent him home with a recipe for zucchini “crab” cakes. There’s no crab in them at all — just zucchini, onion, breadcrumbs, mayo (though I’ll sub with sour cream), seasoning, and an egg! I know what we’re having for dinner tonight…
Here’s the recipe:
Zucchini “Crab” Cakes
Makes 4-6 cakes.
-2 cups coarsely grated zucchini, unpeeled (about 1 medium)
-1 cup Italian breadcrumbs (or regular breadcrumbs with seasoning added)
-1 onion, coarsely grated
-1T mayo (sub with sour cream if you don’t like mayo)
-1T Old Bay seasoning
-1 egg, beaten
1. Combine all ingredients in a small bowl. If too dry, add an egg; if too wet, add more breadcrumbs.
2. Heat oil in a skillet. Form mixture into patties and fry over medium heat until golden brown on both sides, 2-3 min per side.
That’s all there is to it! One bowl, one skillet, easy peasy. Definitely making these tonight!
