So I’m a caterer’s worst nightmare I imagine. I am gluten-sensitive, which means no wheat for me. No pasta, bread, tacos, cakes, pies, etc. But here’s the kicker: I can’t eat most ‘gluten-free’ alternatives because I have an even worse reaction to brown rice/brown rice flour, which is in many GF dishes.
To top it off, I could never drink diet drinks or ‘sugar free’ ones, because the sweeteners, um, well, let’s just say it’s worse than gluten and brown rice combined. And I typically have low glucose levels anyhow, so I try not to aggravate it. This makes planning meals really hard. 🙁
Anyone else have weird digestion issues? What ways have you found to work around it, given a small budget?

Gluten, dairy, yeast, fructose.
I’ve yet to pick out a meal with the caterer.. I’m going to have someone pack me a GF sandwich for backup

I’m planning to have a smaller batch of gluten free versions of everything for me and the few other GFers that I know are coming to our reception. I’ll still have regular food for the majority of the guests, I know they wouldnt recognize gluten free food unless they were told it is, but it’s so much more expensive, so we’re sticking with 2 versions of everything.
Your rice issues really suck since most gf substitutes are rice based. I hate that for you.Potato bar?

I can’t do dairy. My mom can’t do dairy, eggs, gluten, or soy.
Lots of meat and veggies. 🙂

I’m ok with meat and veggies! LOL Can’t seem to handle dairy very well (it’s rare). I’m hoping someone’s gonna be able to create a cure for this problem LOL

I have Celiac and have been gluten free for the last year! I also have an egg allergy! It is so very hard but i make it work! The top tier of my wedding cake will be gluten free and the caterer will have gluten free options for me at my wedding! Its extremely hard at work because we have food brought in a lot and people ordering breakfast and ice cream cakes for birthdays! It stinks but i make it work!

I am, bizarrely, allergic to tomatoes (and developed it later in life — about a year and half ago). It’s not nearly as life changing as some of the stuff you ladies have to deal with, but it’s plenty frustrating on it’s own. I had no idea how many things used tomato paste.

@Sweet_Tea: I’m gluten sensitive, lactose intolerant, allergic to tree nuts too. You can do tacos so long as the tortillas are all corn and the meat has no fillers. Also instead of processed sugar try honey or molasses. I prefer honey. Also instead of rice as a wheat substitute try nut flours (unless you are allergic like me!)
I tend to use lentils and quinoa as my bread/starch stand ins. Honestly your allergies arent that restrictive. I’ve taught kids who are celiac and allergic to eggs. it’s torture!

@bootsky: is the top tier touching non-GF? this could still be dangerous. And are they making it in a gluten free environment? You don’t want it contaminated!

I’m a celiac with suspected pancreatic insufficiency. I also have soy protein and kiwi allergies. I dont do well with corn protein either, or certain milks. No beef either. I’m on a high protein, low fat, low sugar diet for the whole pancreas bomb too so I feel you. Too much sugar I peak and crash not enough I crash. Too much fat my system dumps.

No the top tier will be elevated with flowers under it! I know, the venue is very aware of cross contamination, they are good with it! I eat at places all the time that serve regular food and i am always fine! I am very careful with this stuff lol we have to be!

@Sweet_Tea: i hear you! I am also a resturant and any food related places nightmare. I am also allergic to gluten and wheat ;( plus dairy, soy, and eggs! I honestly dont eat out very much. when i do i have certain places that i have learned over time that are very accomodating. tell them you have an allergy and most places wil accomodate cause they dont want you tto have an allergic relaction in their resturant. i usually just stick to meat, vegies and fruit. because you are safe with those things. I dont digest rice or artifical sweetners well either. I dont hvae any proven allergies to them but I know they mess my stomach up 🙁 when i go to peoples homes, parties or weddings I eat before I go and pack plenty of snacks to keep me going.

On my own I’m not too bad, I’m allergic to fish oil or something common in most seafood, so any seafood is out for me. Get me together with a couple of my friends and I think we could make just about any cook cry. My friend A is allergic to milk, eggs, pork, and beef. His ex-GF C has celiacs, and my friend R is paleo and cannot have any dairy or eggs. We also sometimes hangout with a friend’s sister who used to be vegetarian and is now vegan.
I think we can all eat steamed vegetables. With out the vegan we can all eat chicken or turkey. Making a meal for all of us is really hard. I’ve done it a few times, but not since R went paleo.
