Our place offers carving, pasta, stir fry, fajita, omelet, and dessert. I don't know if I want to do some of these or two/three buffets/feasts and an ice cream bar.

What ideas have you seen either online or in person? What are your favorites or what sounds the most appetizing if you haven't seen these in real life?
Some ideas I have seen online that sound yummy:
Carving station (usually listed online as being served with rolls only as sandwiches)
Pasta
Asian stir fry
Mexican - fajitas, tacos, quesadillas, etc
Mashed potatoes
Macaroni and cheese (haven't met anyone who eats the various toppings that are suggested though)
Salad bar
Caesar salad - made to order
BBQ ribs
Kids' - mac & cheese, chicken fingers, pizza, etc
Soup - would be good for colder months
Crepes - usually served as dessert, be it cherries jubilee or with sweet breakfast toppings such as powdered sugar
Waffles/French toast - served with usual toppings
Caramel apple - dip your own
Carnival food/NY hot dog stand
Espresso/cocoa
