I absolutely LOVE cooking (and eating) and I love talking food with others, coming up with new recipes, and getting new inspirations. This thread is for posting pics of things you’ve cooked/baked, sharing your recipes if you’d like, or just yummy things you enjoy
Here are some things I recently made. The first pic is from Sunday: Mussels sauteed in a white wine garlic sauce, and Parmesan Shrimp Scampi & Cappelini, both with fresh cherry tomatoes from my dad’s garden. The 2nd pic is from last night: Ritz Cracker and parm breaded chicken breasts stuffed with a Lump crabmeat, cream cheese, and Ritz cracker dressing, served with pesto in white truffle oil and crusty French Baguette.

My Mussels in White Wine Sauce Recipe:
2 tablespoons olive oil
1/2 small vidalia onion
2-3 Green Onions, chopped
4 cloves garlic, chopped
2 pounds mussels
3/4 cup white wine
1/4 Lemon Juice
Salt and Ground black pepper to taste
4 tablespoons butter
1 cup Cherry Tomatoes, halved
1 teaspoon thyme
1/4-1/2 chopped parsley, or more to taste
Any open mussels that do not close when you press their shells a few times are dead, and you should discard them. Rinse and scrub mussels under cold running water. Using your fingers or a paring knife, remove beards (strings that hang from the mussels’ shells), and discard.
In a large saucepan, heat olive oil and 1 tbsp of butter over medium heat. Sautee onions and garlic for 3-5 minutes. Add mussels, white wine, and lemon juice. Cover, and increase heat to high, cooking until all mussels are open, about 3-5 minutes Season with salt and pepper, and then add butter, herbs and tomatoes. Continue cooking until the butter is melted, carefully tossing to combine. Serve immediately.

@starrdust: looks so yummy. i make my mussels almost the exact same way. i love them. have you ever tried it with red wine? i know it’s a faux pas seafood and red wine but i heard once to cook with the wine you like to drink. so i did. it’s really good too.

@mypinkshoes: i will definitelt try it with red wine! I’m sure it will be good. I totally do the faux pas of drinking white wine with red meat and red with seafood on occasions…just depends on what I’m in the mood for. Rules were made to be broken 😉
