You have my highest praise and admiration! We just had my inlaws 40th anniversary party and as a surprise to them I made all the desserts for it. I recreated the taste of the wedding cake and did a double layer cherry cake with vanilla buttercream frosting. Since we had about 70 people there I made more desserts – 60 red velvet mini cupcakes, 24 Cinnabon cupcakes and another cake, chocolate with salted caramel buttercream frosting, all from scratch
Thankfully they all turned out really well and I got compliments from everyone all day. But I had to bake on Saturday morning, go to work from 2pm-9:30pm and then come home for a couple more hours and bake. Then I woke up the day of to make some more frosting and frosted the minis.
I have no idea how you brides can do all this for your wedding, especially when there are so many other things going on!!! I wouldve never been able to do it, even if I did have more fridge space 🙂 I was able to refrigerate everything thankfully…our apartment gets quite warm and I didnt want all the frosting to melt all over.
